About the Role

Beginning April 2024, We are recruiting chefs at our busy and fun rural pub in Shropshire - The Bridges Pub, Ratlinghope. The pub is the ideal place for an aspiring chef at the start of their career who has an interest in cooking from scratch, with the best quality seasonal ingredients, for a menu that changes frequently. The pub specialises in honest cooking where the ingredients are the focus. All produce comes from Linley Farm - an organic, regenerative, no-dig garden and we use what is available with the seasons. You will meet with Kate, the head gardener, frequently to discuss what is in season and what is best to use each week. This type of relationship is something that you cannot get in another kitchen. You will be truly cooking with the seasons! Meat is provided from Linley and other respectful meat suppliers nearby. We specialise in whole animal butchery and embrace nose-to-tail eating. This isn't the type of pub where meat and fish arrives frozen and is destined only for the fryer. You will be taught how to bake your own bread, break down the animal into its various cuts and be preparing a wide range of dishes inspired by traditional English cooking, with some inspiration from abroad. This is the perfect opportunity for a new chef who wants as much exposure as possible, or for a chef early into their career who is looking to be inspired and to work with the very best ingredients available. Our pub is beautifully situated where two rivers meet. It has plenty of outdoor seating, and is very popular with locals, visitors and walkers on the Long Mynd and Stiperstones.  Pay is reflective of experience. Accomodation can be arranged.

Your Responsibilities

Assist the Head Chef in supervising and coordinating all culinary activities in the kitchen Oversee food production and ensure high-quality standards are met Maintain a safe and sanitary work environment by following food safety regulations Collaborate with the management team and garden to develop the daily menu

Role Requirements

Proven experience working in a culinary role, preferably as a Sous Chef or similar position Strong knowledge of food production techniques, culinary trends, and food safety practices Ability to work in a fast-paced restaurant environment and handle multiple tasks simultaneously Exceptional attention to detail and organizational skills Flexibility to work evenings, weekends, and holidays as required
