Job description

Preparing, cooking & presenting dishes within the main HQ kitchen alongside the Kitchen & Stores cafe both located at Park Farm, ensuring all aspects follow the values and ethos of River Cottage

A River Cottage Chef role is like no other. You will be working with a menu that is influenced by the seasons using the very best local, responsibly sourced, seasonal ingredients to create delicious dishes, which reflect our passion and commitment to food provenance.

You will have a passion for working with fresh ingredients and a keenness for developing your culinary skills working with the best ingredients the South West has to offer, as nearly all our menu is created fresh. You will work closely with our suppliers & have creative freedom with the guidance of our Head Chef Chiara Tomasoni.

KEY TASKS

People - Having a proactive mentality - this role is very multi-faceted and each day at the office can vary significantly. This keeps things interesting for you as a chef, but requires a creative, self-driven mindset. - Respect your fellow team members and work as part of a team to deliver a great guest experience every time

- Assist in training new team members when requested by your line manager and provide constructive feedback on performance. Guest Service Fully understand the River Cottage ethos/brand and effectively communicate the values to others. Run and manage your section during service time to produce high quality food in a timely manner to meet guest expectations.

Sales and Profitability Ensure that all controllable costs are kept within budget by recording all waste and ensure accurate accepting of deliveries Maintain due diligence manuals when requested to do so by your head/sous chef Ensure the consistent quality, rotation and levels of stock to ensure quality and reduce wastage.  

Practices

Ensure that all company assets, stock and property are well cared for and secure at all times. Maintain and monitor the highest standards of Hygiene and Health & Safety in accordance with all statutory, legal and company requirements.

Ensure all due diligence & HACCP documentation is recorded & filed. Ensure the proper implementation of all company policies and procedures. Adopt a clean as you go approach and clean up any spillages immediately. Attend training and team meetings as required. Wear PPE safety equipment in line with company policies Report any health & safety issues to your head chef & general manager immediately Undertake any such other duties as may reasonably be required by the company

Maintain highest personal standards of presentation, dress & behaviour. Use the company food safety labelling system to minimise waste and ensure food safety
