Job description

Tillingham Vineyard is a beautiful estate located in Peasmarsh, East Sussex. It's set amidst 70 acres of rolling hills and woodlands, with stunning views along the Tillingham River valley and across to the hilltop town of Rye. The vineyard is known for its natural and biodynamic wine production. Our Restaurant just retained our Green Michelin Star for the fourth year running. We offer 11 unique rooms, as well as 2 high-spec Bell Tents available seasonally from May through September.

You would be joining the team who brings our experience together; the produce from our garden cooked to align with the wine grown in our vineyards and then served by you to our excited guests.  This role is crucial to the success of any hospitality operation and we work hard to deliver on passion, knowledge and quality of service.  

Responsibilities

• FOH Service:  you will work as part of a team to provide service across breakfast, lunch and dinner, for our Hotel guests and those who visit for a wine tour or to relax.  With a food menu in the bar, you may work to serve either our tasting or a la carte menu in the main restaurant, or those who are enjoying the ambiance in our bar.
• Wine: As a Michelin Green Star vineyard producing quality organic wine, you will be required to learn about the process, the wine and the pairings and be confident to discuss with our guests, making recommendations confidently when asked.  Training will be provided. 
• Sales: there is an opportunity to sell our wine to guests, both when dining and to take away and you will be expected to work confidently in this area

Skills and Competencies required:

• Confident when communicating with everyone; assertive skills demonstrated to ensure an authentic but empathetic approach to all challenges
• Digital confidence with systems and an ability to effectively identify bookings through internal system
• Ability and confidence with service tasks and an understanding of front of house requirements
• Interest in wine, sustainability and hospitality - some experience useful 
• Willingness to work in a busy, flexible and complex business where a 'hands-on' approach is required, within a team of like-minded and passionate people
